The tea turns black because it fully oxidizes, providing a strong and full-bodied taste. After the harvest, the leaves are withered with air.

There are two options to produce high quality black teas by hand or by machine.

Machines process the tea leaves (mostly lower-grade leaves) to reduce costs. These lower grades, machine processed, teas usually end up in tea bags.

The hand method is the orthodox way of processing, and is used for the high quality black teas. Such processing gives the loose tea that smooth flavor.

To create high quality black teas, humidity and temperature are controlled, which allow oxidization and fermentation to occur. Oxidization is halted by drying the leaves. Leaves are then sorted and graded according to size.

Popular high quality black teas are from regions such as Assam and Darjeeling in India, Ceylon in Sri Lanka, and Yunnan in China. Each tea is usually named for the district from which it was produced.  This creates a distinction.
